Coconut Oil – Good or Bad

Coconut Oil.  Good or bad?

I love coconuts.  All of us at Reggae Marathon love coconuts…we give them out at the conclusion of the races.  Excellent and refreshing!

Coconut trees grow wild across the island especially near the coast and our beaches.  We grew up with a coconut tree on our property and it was a treat to get a fresh coconut.  The refreshing water of the coconut first then the jelly.  Yum!

Every part of the coconut can be used for something:  Coconut Coir, the dried fibre that surrounds the ‘nut’ is becoming increasingly popular as a hydroponic growing medium;  The nut itself is often used in crafts;  The coconut water is high in natural sugars and electrolytes;  Coconut jelly when dried can be used in numerous food dishes.

And then we have Coconut Oil.  Used in cooking, it has recently gotten some bad press since it is high in saturated fats.  Still though, used in moderation, Coconut Oil is a tasty alternative in cooking.   It isn’t the magic bullet but it can be used instead of butter or shortening in baked goods or to impart flavor in curry dishes.  For more information on Coconut Oil, here is a good article:   Is coconut oil good or bad?
